Hot Brown Recipe

Shopping List
- Turkey Breast
Can be from a roasted turkey or deli slices (we have used “Carving Board” Turkey Breast thick slices from Oscar Meyer, 7.5 oz package)
- 1 lb Bacon
- 2 Roma Tomatoes
- 1 Load of Italian Bread
- 1 Wedge of Pecorino Romano Cheese (5oz - 8oz)*
- 1 Pint (2 cups) of Heavy Whipping Cream
- 1 Quart (4 cups) of Milk (can be skim milk, 2%, or whole milk)
- Butter (salted or unsalted)
- Salt
- Pepper
- Nutmeg (or Cinnamon)
- Paprika
- Parsley (garnish only)
- All Purpose Flour
(Pecorino Romano cheese is preferable, but Romano cheese can be substituted)
Directions
- Prepare then set aside for plating later:
- a. Cook bacon and drain
- b. Slice and toast Italian bread (for extra flavor, brush with olive oil and then toast)
- c. Dice roma tomatoes
- d. Warm turkey
- Grate entire wedge of cheese
- Set aside a couple of tablespoons for garnish at the end
- To make Mornay sauce:
- a. Heat pan on stove to medium heat
- b. Add 4 tablespoons of butter to pan and slowly melt
- c. Once butter has melted, add flour:
- i. 4 tablespoons of flour will be needed
- ii. Add 1 tablespoon at a time; whisk into flour completely before adding the next tablespoon
- d. Once all flour has been added, let simmer for 1-2 minutes
- e. Add heavy whipping cream slowly to pan and whisk while adding
- i. You will use the entire pint
- f. Season with pepper
- g. Slowly add your other milk to the pan (you will use at least two cups) and whisk while adding
- i. This milk is to help not only add volume to your Mornay sauce, but to also get it to the consistency you want, which is why you may want to use more or less milk
- ii. Once you get your Mornay sauce to the consistency you prefer, taste - then add salt, pepper, and a pinch of nutmeg (or cinnamon) and stir
- To assemble
- a. Place slices of toasted bread on a baking sheet
- b. Add turkey, bacon, tomatoes*, Mornay sauce, and sprinkle some leftover cheese on top
- c. Place in oven to broil until golden brown and warm
- To serve
- a. Place Hot Browns on a warmed plate, sprinkle with more cheese, parsley, and/or more tomatoes
- b. Enjoy!
- Tomatoes can be saved until the end after Hot Browns are brought out of the oven to add a refreshing bite to this heavy dish
